Creamy Fettuccini Alfredo

I’ve spent so long trying to perfect this recipe, and now I have finally done it! With only a few ingredients you can have a delicious dinner in 30 minutes.

Creamy Fettuccini Alfredo

16oz Fettuccini Noodles

2 cups heavy cream

2oz cream cheese

1 stick of butter.

1/4 cup flour

1 tbsp minced garlic, heaping

1 cup grated parmesan cheese, plus more to garnish

salt and pepper to taste

Place a large pot or dutch oven of water over medium high heat and bring to a rolling boil and add a few pinches of salt to flavor the water.

Once the water is boiling, add your box of pasta and cook according to the box instructions.

While the pasta is cooking, place a medium sized sauce pan over medium heat. Add the butter and cream cheese to the sauce pan to melt. Once both are mostly melted, add your heaping tablespoon of minced garlic. Let them cook for a couple minutes until everything is fully melted and the garlic becomes fragrant.

Whisk in the flour to your butter mixture until all the flour is incorporated. Next, pour in your heavy cream and whisk until there are no lumps from the butter/flour mixture.

Add in your salt and pepper to taste.

Turn the heat down to low and let simmer for a few minutes while checking on the pasta. Reserve a 1 cup of pasta water before draining.

Once the pasta is al dente, drain the pasta and return to same pot and return to stove.

Remove the sauce from the heat and add your parmesan cheese. Stir until it is all melted, then add in the reserved pasta water.

Once the pasta water has been mixed in, dump the sauce on top of the pasta and stir to coat the fettuccini.

Garnish with any remaining parmesan cheese. Serve immediately.

As the pasta and sauce cool, the sauce will thicken more.
