Serves 4-6

This recipe is great to make for a cold, winter day! Pair with your favorite garlic bread or homemade artisan bread recipe! It only takes 3 short hours to prep and cook so you can keep doing life without thinking about dinner until it’s ready to serve!

Crockpot Cheesy Tortellini with Smoked Sausage

19oz bag frozen cheese tortellini

2 cups chicken broth

14.5oz can Italian-style diced tomatoes (if you want a slight kick, Rotel would work too)

8oz block cream cheese

1 1/2 cups shredded Mozarella

1 tsp each of garlic powder and onion powder

6-8oz spinach (fresh or prepackaged is best, frozen or canned is too watery)

Salt and Pepper to taste

14oz smoked sausage (I used Kroger brand)

  1. Dump everything into crockpot in the order listed above.
  2. Cook on low for 2 1/2 hours, stirring every half hour to ensure the cheeses are melting and sausage is warming through.
  3. Serve with your favorite bread or side salad (or both)
