Lasagna Soup

You’ve probably seen this floating around on TikTok, and I can tell you this is absolutely delicious! This is a great weekday dinner that is done in about 30-40 minutes and makes great leftovers!

Lasagna Soup

1 pound ground beef

1 small yellow onion, diced (or half of a large one)

2 tbsp minced garlic (or 6-8 cloves of fresh garlic)

1 tbsp dried oregano

1 tbsp dried parsley

1 tbsp dried basil

1 tbsp Italian seasoning

1/2 tbsp paprika

Salt and pepper, to taste

2 tbsp tomato paste

6 cups beef broth

24 oz marinara sauce

1/2 cup heavy cream

8 oz lasagna noodles (normal or oven-ready work)

Cheese Mixture

1 cup ricotta

1 cup Mozzarella

1 cup Parmesan cheese, shredded

Salt and Pepper to taste

  1. In a large Dutch oven (6 quart or larger), on medium- medium high heat, add in ground beef and onions. Break up and cook meat until pink is gone. Then add in garlic and cook for a couple minutes.
  2. Add it all the spices to the meat mixture, once those are mixed in, add the tomato paste and mix.
  3. Pour in beef broth and marinara and bring to a boil. While you’re waiting for it to boil, break up your lasagna noodles then pour them into the soup stirring to submerge them all.
  4. Turn heat down to low, cover, and simmer for 20 minutes, stirring occasionally.
  5. While soup is simmering, put the cheese mixture together. Mix the ricotta, mozzarella, and Parmesan in a bowl and set aside.
  6. Once the lasagna noodles are al dente, add in 1/4-1/2 cup of the cheese mixture into the soup along with the heavy cream. Stir to incorporated.
  7. Soup is ready to serve. Add a dollop of the remaining cheese mixture into your individual bowls to add extra creamy goodness!
