Chicken Cobbler

This recipe is very comforting and is great for a cold, wintery day or if you’re just craving comfort food. I first came across this recipe on TikTok, but other great cooks have this recipe or something similar to share.

Chicken Cobbler

1 stick of butter, melted

4 cups cooked chicken, chopped or shredded.

1 bag of frozen small mixed veggies (peas and carrots or pea, carrots, corn, and green beans. It’s usually 12oz or 16 oz)

14.5 oz can cream of chicken soup

2 cups chicken broth

2 cups milk

1 box of Cheddar Bay Biscuit mix

  1. Pre heat oven to 375F degrees.
  2. Add your melted butter to a 9×13 casserole dish, swirling it around to spread butter to all the corners.
  3. Add in your chicken to the casserole dish, spread out into an even layer.
  4. Sprinkle your frozen veggie mix over chicken
  5. In a medium bowl, mix together the 2 cups of milk with the contents of the biscuit mix. Including the seasoning packet. Don’t over mix. Then pour this over chicken and veggies.
  6. In the same medium bowl, mix together the chicken broth and chicken soup. Then pour over chicken/biscuit. Once these ingredients are in the casserole dish, do not mix them together!
  7. Bake in prepared oven for 45-60 minutes.
  8. Let sit for 10 minutes to let it set up some before digging in.

Notes:

If you would like to season the chicken, you can. I have found that the biscuit mix will add a lot of flavor when it is done and sometimes adding salt/pepper to the chicken can end up making the dish super salty.

For the chicken, you can use a cut up rotisserie, cook your own and shred it, or use precooked and shredded chicken (I know Walmart sells it in the deli). All options are great with this!

What ever you do, DO NOT MIX the casserole once everything is in the baking dish (step 6). Trust the process.
