Chop the broccoli into smaller bite sized pieces, then add to a large bowl.
Add bacon bits, cheddar, and onion to the bowl with the broccoli. If using cranberries and sunflower seeds, add these, too.
In a small bowl, mix together the mayo, vinegar, sugar, salt, and pepper.
Pour the dressing over the broccoli mixture, then toss to coat or gentle fold the dressing into the salad until everything is coated.
Cover and refrigerate for at least 2-3 hours before serving, but for best flavor, refrigerate overnight.
