
Simple Alfredo for Two
A few ingredients is all you need for this simple alfredo for two. No need to cook for a crowd when you only have two people in the house. Pair this recipe with a salad and some bread sticks and you might just have some left overs for lunch! Grilled chicken is also a great addition to this meal!

- Fill a medium pot about two-thirds full will water and set on medium-high heat. Salt water generously.
- Once pasta is boiling (large, quick bubbles), add in your pasta. Stir gently until it is fully submerged and not sticking together. DO NOT add oil to your water. Boil pasta for a minute or two less than box instructions. About the time it takes to make the sauce. (8-10 minutes)
- While pasta is boiling, set a large skillet on medium heat and melt your butter.
- Once butter is melted, add in your garlic and stir constantly so it doesn't burn. About a minute or two. The garlic will become fragrant.
- Slowly add in your heavy cream, stirring consistently to incorporate it into the melted butter and garlic. Once they are incorporated, don't forget to give your pasta a quick stir to prevent sticking or clumping.
- Add your salt, pepper, and Kinders (if using) to the cream mixture. Once these are mixed in, let the mixture sit and simmer, stirring occasionally. The mixture will start to thicken after a few minutes (3-5 minutes).
- Once the cream mixture has begun to thicken, lower the heat to low and add in the Parmesan cheese; stirring constantly to incorporate it.
- Check your pasta, give it a stir, pull out a noodle and taste it. It should have a slight chew to it, and not mushy or crunchy.
- DO NOT drain your pasta water. Use tongs to a pasta scoop to transfer your pasta into your sauce skillet. Once all your pasta is in the sauce, add about 1/4 cup of pasta water and vigorously mix everything together. The pasta water will mix with the cream sauce and will become creamer and cling to the noodles.
- If the sauce is too thick, add more pasta water and repeat the vigorous stir again. If the sauce is too thin, let the pasta and sauce simmer on low for a minute or two then stir again.
- Serve immediately! Enjoy!
